South Mill emphasizes the fact that responsibility for quality assurance lies within each individual at South Mill and this personal approach is comprehensive when it comes to overall product quality. All department team leaders at South Mill, including Maintenance, Shipping, Packing, Cold Storage, Receiving, and Transportation meet on a routine basis for continuing educational training and best practice updates. When all personnel in receiving, packing, and shipping are assuming responsibility for all aspects of product quality; errors are greatly minimized. All plant equipment, farm practices, packing and processing have been brought into compliance under a company-wide HACCP (Hazard Analysis Critical Control Point) Program. Our facilities and operations are continuously self-monitored and regularly audited and approved by the AIB (American Institute of Baking), a well-respected, independent association widely recognized for their high standards. We are proud of our record of consistently scoring in the 97 percentile or above in all our facility AIB Audits. All routine self-audits conducted at South Mill involve critical analysis of Pest Control, Sanitation, Operations and Facilities, Good Manufacturing Practices, Product Protection and Product Recovery.

To facilitate product identification and tracking, we have ink-jet coding equipment which applies a tracking code to each package identifying the growing room where harvested, the date packed in Julian terms and the packing line number and supervisor on duty. This code allows us to accurately track all of our products through the distribution system.
